Clean Eating Kolacki
A healthy twist on a favorite family recipe of mine.
whole wheat flour
I used sprouted flour
can substitute 2 sticks of softened butter
strained greek yogurt

can substitute pure maple syrup or agave
Slice apricots into pieces
Put water and honey in a small pot, bring to a boil, and add the apricots
Simmer until apricots are soft (1-2 hours)
Remove from heat and add lemon juice
Let sit until water is mostly absorbed
Strain greek yogurt by lining a strainer with a coffee filter or cheese cloth, and let sit on the counter over a container for about 2 hours.
Preheat oven to 350F
Mix greek yogurt and ghee with a fork
Stir in flour and salt, being careful not to overmix
Roll out dough and cut into circles. My dough was a little crumbly, and did not require flour to roll out.
Place cookies on an ungreased baking sheet
Top with apricot filling
Bake for 20 mins, or until golden brown
