  1. Slice apricots into pieces
  2. Put water and honey in a small pot, bring to a boil, and add the apricots
  3. Simmer until apricots are soft (1-2 hours)
  4. Remove from heat and add lemon juice
  5. Let sit until water is mostly absorbed
